The crust must be completely cool before spreading the cream cheese mixture -- even slight warmth will melt the spread and make it runny. Soften the cream cheese fully at room temperature for at least 30 minutes so it blends smoothly with the sour cream; lumps won't spread evenly over the crust. Prep all vegetables while the crust bakes and cools so they are ready to go the moment the spread is applied -- wet or freshly cut veggies can be patted dry to avoid a soggy crust. To avoid tearing the crescent dough, press seams together firmly with your fingertips before piercing with the fork; a solid crust holds toppings better when sliced. This pizza can be assembled up to 24 hours ahead and stored covered in the refrigerator; the flavors deepen overnight but add the vegetables no earlier than 2 hours before serving to keep them crisp.
