Meat cannelloni is made with a savory mix of veal, pork, and beef cooked with onion, celery, carrots, garlic, wine, and herbs in Parmesan cheese sauce. This mixture is rolled with strips of fresh pasta, then baked with a creamy tomato sauce.
Spread the cooked pasta noodles in a single layer on paper towels immediately after the cold-water bath; stacking them causes sticking and makes rolling impossible.
The meat filling must be reduced until almost completely dry before you add the egg yolks -- excess moisture will make the cannelloni soggy and cause the rolls to burst open during baking.
Cook the filling and bechamel up to a day ahead and refrigerate separately; assemble and bake straight from the fridge, adding 5 extra minutes to the bake time.
The dish is done when the sauce is actively bubbling at the edges (internal temp of the filling should reach 165 degrees F); finish under the broiler no longer than 2 minutes or the Parmesan topping will burn rather than turn golden.
Ground turkey or chicken can replace the veal for a lighter version, but add an extra tbsp of olive oil to the skillet since poultry releases less fat and the soffritto will scorch otherwise.
