The tortilla fry is a 2-to-4-second flash -- any longer and they crisp up and crack when rolled; pull them the moment they blister and puff. Dip each tortilla in the cream mixture immediately after frying while it is still hot and pliable, before it stiffens. Use a shallow, wide dish for the cream soak so every tortilla gets an even coat; tilt the dish to submerge fully. Rotisserie chicken works perfectly here -- shred and chop it while still warm so it mixes easily with the chilies and salsa. Assembled enchiladas can be refrigerated up to 8 hours before baking; add the remaining cream mixture and cheese right before going into the oven so the tortillas do not become soggy.
