Crab cakes are done when they reach a deep golden-brown crust and an internal temperature of 165°F; avoid flipping them more than once or they will fall apart. Sauté the green onions first and let them cool completely before mixing into the crab mixture, otherwise the heat will start to cook the egg and make the patties dense. The most common mistake is over-mixing the filling: fold ingredients together gently so the crab stays in recognizable chunks rather than a paste. For a make-ahead option, form and bread the patties, then refrigerate uncovered on a sheet pan for up to 4 hours before frying; chilling firms them up and helps them hold their shape in the hot oil. If you prefer a lighter fry, swap the frying olive oil for a neutral high-smoke-point oil such as avocado or canola oil, which will brown the crust evenly without the risk of olive oil burning at medium-high heat.
