Pick small zucchini (6 to 8 oz each) rather than large ones -- they have fewer seeds, firmer flesh, and hold their shape on the grill without turning mushy. Make the marinade and prep the zucchini first, then preheat the grill so it reaches temperature right as the 20-minute minimum marinating time ends. Do not marinate longer than 2 hours: the lemon juice will start to break down the flesh and make the zucchini soggy before it ever hits the grill. The grill is ready when it holds 400 to 450 degrees F (medium-high); this gives you the fast sear that creates browning without overcooking -- zucchini is done when it yields to a poke but is not limp. Substitute dried parsley (1 tsp) if fresh is unavailable, but stir it into the marinade rather than sprinkling on at the end so it has time to rehydrate.
