The sauce should coat the back of a spoon before you pull the pan off the heat; if it looks thin, give it another 30 seconds of stirring at a low boil or it will make the finished casserole soupy. Cook the spaghetti just to al dente and no further since it continues to absorb the sauce during the 30-minute bake; overcooked pasta turns mushy. The most common mistake is adding the chicken broth and cream all at once while still on the heat, which causes lumps; always remove the pan from heat first and add the liquids gradually while stirring. Dry sherry is the right call here; cooking sherry is loaded with added salt and will throw off the seasoning balance with the kosher salt already in the sauce. Assemble the unbaked casserole up to 24 hours ahead and refrigerate covered; add 10 minutes to the bake time straight from the fridge, and look for the edges to bubble actively before pulling it from the oven.
