Cube potatoes into 1/2-inch pieces so they cook evenly and become tender within the 10-to-12-minute simmer window; larger chunks will still be hard when the broth is ready. Cook the flour-butter roux for a full minute before adding milk to eliminate any raw flour taste -- the mixture should smell nutty and look pale golden before you whisk in the milk. Do not boil the soup after adding sour cream; heat it only until just warmed through or it will curdle and break the creamy base. For clean melting, cut the cheddar into small cubes rather than shredding directly from a cold block -- cold pre-shredded cheese coated in anti-caking starch can leave the soup grainy. The soup thickens considerably as it cools; store leftovers in an airtight container for up to 3 days and thin with a splash of chicken broth when reheating over low heat.
